Introduction

Ingredients

    2 T olive oil
    1 large boneless, skinless chicken breast
    12 oz. frozen artichoke hearts
    16 oz, frozen spinach, thawed and drained
    1.5 c pasta sauce (I use a puttanesca sauce)

Tips

Use frozen, no-salt-added artichoke hearts if you can find them--the canned varieties nearly always are loaded with sodium. Nutrients will vary depending on the brands of items you use.


Directions

Cube chicken breast. Sauté in olive oil in a large heavy skillet. When browned, add artichokes and spinach; stir and cook five minutes. Add sauce; simmer gently for 10 minutes.

Serving Size: Makes 4 approximately 1.5 cup servings.
