Ingredients

1 cup pecans
1/2 cup almonds
1/2 cup pumpkin seeds
2 cups large flake gluten-free oats
1.5 cups dates (cut in half and soaked in water for 5 mins)
2 cups chopped gala apples
1 tbsp agave syrup
3 tbsp shredded unsweetened coconut
2 tsp cinnamon
1 tsp vanilla
Directions
1) Toast the pecans, almonds, pumpkin seeds and oats in oven heated to 350 F for 10 minutes or until fragrant, turning once. Let cool for 10 mins. Leave the oven on at this temperature.
2) Add the toasted nuts, seeds and oats to food processor and pulse until medium sized crumbs form.
3) Add dates one small handful at a time while food processor is going. Pause between additions.
4) Add chopped apples and agave syrup. Pulse until combined.
5) Add coconut, cinnamon, and vanilla. Pulse until everything binds together. Scrape sides and bottom of processor as needed.
6) Dump mixture into parchment paper lined 8x8 pan. Press down firmly and evenly.
7) Bake for 20 minutes at 350 F. Cool for 15 minutes then slice into 12 bars. Store in an airtight container in the fridge.
