Ingredients

    250 gm red lentils (no need to soak them)
    2 x onions,finely chopped
    4 x carrots, chopped
    500 gm sweet potato, chopped
    500 gm butternut pumpkin, chopped
    1.5 L hot water
    pepper to taste

Directions

Cook onion in stock pot (in either olive oil or water) and if you want garlic add that too.
Chop all the vegies to small pieces,the same size.
Once onion is transparent, add 1.5 L hot water, 250 gm of red lentils (no need to soak them first). Then add all the chopped vegies and pepper. Cook for about an hour until vegies are cooked through. Use a stick blender to blend smooth. Its really yummy and very filling!

Serving Size: Makes a whole lot of soup - about 12 servings
