Introduction

Quick and easy mini English muffin pizzas. Feel free to add fresh veggies! Easily halved or doubled if needed. Quick and easy mini English muffin pizzas. Feel free to add fresh veggies! Easily halved or doubled if needed.

Ingredients

    4 light multi grain or whole wheat English muffins
    1/2 cup spaghetti/pizza sauce
    1/2 cup low fat, part skim shredded mozzarella cheese
    16 slices turkey pepperoni

Directions

Preheat oven to 400. Toast English muffins if desired. Spoon sauce on to English muffins, sprinkle with cheese and place 2 slices pepperoni on each muffin. Place pizzas on baking sheet and bake for 8-10 minutes until cheese is melted.

Serving Size: Makes 8 mini pizzas, 2 per serving.
