Ingredients

    2 pounds pork loin roast
    1/2 tsp cayenne
    1 tsp oregano
    1/4 tsp black pepper
    1/2 tsp thyme
    1/2 tsp ground mustard
    2 garlic cloves
    salt 2 tbsp butter
    1 tbsp extra virgin olive oil
    20 baby carrots
    2 stalks celery
    2 to 2 mini sweet peppers
    1 medium onion

Tips

four a four pound roast increase the cooking time a half hour in the 300 degree oven.


Directions

place olive oil in baking/roaster pan. place in preheated oven of 300 degrees. Cut slits into the fatty side of the pork loin. in small skillet melt butter, add spices and sautee for 1 minute.
take pan out of oven, place roast in pan. pour spice mixture over roast making sure to push into slits as much as possible. smear rest onto meat. place caroots, onions and peppers around meat. Cook for 1 hour and 15 minutes. Raise oven temp to 425 degrees and cook for an additional 15 minutes to brown the roast. Internal temp should be 145 degrees.
let stand for 10 minutes before carving.
