Introduction
Was looking for something different to make with ground chicken and got the idea to use muffin cups from a recipe I saw on pinterest. This is tasty and my teenage boys liked it. Was looking for something different to make with ground chicken and got the idea to use muffin cups from a recipe I saw on pinterest. This is tasty and my teenage boys liked it.Number of Servings: 5
Ingredients

1 lb ground chicken
1/4 cup parm/romano cheese
2 medium eggs
1tsp black pepper
1 tsp kosher salt
2 tsp Italian seasoning
1/2 cup marinara sauce
2 slices provolone cheese
2 slices of toasted whole wheat toast, processed into bread crumbs
Tips
Could also use ground turkey or beef but that would change the calories, etc.
Directions
Mix all ingredients except the marinara sauce and provolone in bowl. Divide mixture into 5 large muffin cups that have been sprayed with Pam. Bake at 350 for 30 mins. Remove from oven and cover each muffin with 1 -2 tablespoons of marinara sauce and shredded provolone. Bake another 5 minutes. Remove and serve with spaghetti and/or salad.
