Introduction

This super easy, super yummy veggie saute can be used for tostadas, burritos or tacos - or just eat it alone! This super easy, super yummy veggie saute can be used for tostadas, burritos or tacos - or just eat it alone!

Ingredients

    1 T. extra virgin olive oil
    1 medium yellow onion, sliced
    2 large red bell peppers, sliced
    1 zucchini, sliced
    8 oz fresh mushrooms, chopped
    2 tsp. Taco Seasoning
    1 T. lime juice

Tips

Using water to keep the veggies from sticking and not more oil keeps this low in calories and fat.


Directions

Heat oil in a saute pan. When hot, add onion and pepper and saute until starting to soften. Add zucchini and mushrooms, adding water to the pan as needed to keep the veggies from sticking. When veggies are to your liking, add the taco seasoning and lime juice.

Serving Size: 10 equal servings, about 1/4 cup each
