Introduction
This is how I remember my mom making Watergate salad. Basically no whipped cream and no vanilla yogurt (as some recipes have). It is not fluffy this way, and I find it a nicer level of sweetness and overall more satisfying for a snack or small dessert. This is how I remember my mom making Watergate salad. Ingredients

1 package of Jello Pistachio Pudding Mix (3.4 ounces)
1 container (16 ounces) of low fat cottage cheese
1 small jar (6 ounces) of maraschino cherries
1 can (20 ounces) of crushed pineapple
1 cup of skim milk
You will also require a medium sized bowl, a spatula or wooden spoon, a measuring cup at least 1 cup in size, and a sink to drain juice into.
Directions
- You want to drain both the maraschino cherries (steam-less, 6 ounce jar), which yields about 3 ounces of actual cherries, as well as draining the can of crushed pineapple (20 ounce can, yields about 16 ounces of actual crushed pineapple). I like to add the pineapple to the bowl first so I can drain extra juice off.
- Pour pistachio pudding mix into bowl (with the pineapple if it's already in there, it's fine) and mix with the one cup of milk. The box calls for two cups, but only use one, as the cottage cheese and other wet ingredients make it too thin with two cups.
- Now add in cottage cheese, pineapple if it's not already in there, and cherries and mix it all together nicely.
- Refrigerate for five minutes at the very least before eating to allow the Jello mix to set up completely.
- Enjoy!
