Ingredients

2 cans black beans, drained and rinsed
1 can corn, drained
6 Tbs Olive Oil
~3 Tbs fresh lime juice (1 lime)
1 - 2 Tbs fresh lime zest
1 tsp salt
1 orange bell pepper, chopped
1/2 c chopped green onion
1/2 c chopped fresh cilantro
5 oz grape tomatoes, quartered
1 c vegetable stock or water (I use veggie stock)
1/2 c quinoa
Tips
Add some chopped avocado right before eating, if you prefer (putting it into the salad makes the avocado soggy; avocado is not entered into calorie calculation).
Directions
In saucepan, combine 1 c veggie stock (or water) and 1/2 c quinoa and cook according to quinoa package directions. Cool.
In mixing bowl, combine olive oil, lime juice, lime zest, and salt. Whisk together until emulsified. Add drained black beans, drained corn, cilantro, orange bell pepper, chopped green onion, and cooled quinoa. Use spatula to gently toss ingredients in the dressing. Best if left to marinate for hours and served at room temperature. Store in refrigerator.
