Ingredients

    1 c dry red lentils
    2 tbsp ketchup
    1 tbsp yellow mustard
    1 tbsp low sodium soy sauce
    1 tbsp chili powder
    2 tsp lime juice
    1 1/2 tsp cumin
    1/2 tsp paprika
    1/4 tsp garlic powder
    1/4 tsp onion powder
    1/4 tsp dried oregano
    1/8 tsp cayenne

Tips

If using lentils other than red, pulse warm lentils in a food processor until chopped/pureed prior to adding remaining ingredients. If the mixture looks too dry, add a splash of nondairy milk, or salsa.


Directions

Cook lentils according to package instructions. Once finished, drain and add remaining ingredients; mix well. Serve as taco meat.
