    cauliflower (2 cups)
    broccoli (1 cup)
    zucchini (1.5 small)

    6 eggs
    feta cheese

    blue menu canola oil cooking spray


roast veg on parchment paper in oven until softened (spray first with cooking spray)
spray bottom of a glass baking dish
once roasted, layer veg in dish
scramble eggs (add dried herbs if wanted) and pour egg over veg
bake in oven until egg is set (roughly 20-30 mins)
