Ingredients

Onion, 1 large yellow, diced
Garlic, crushed to taste (2-4 cloves)
Mushrooms, sliced approx. 4 cups
Spinach, chopped, 1 bunch fresh
Cheese, Swiss, grated 6 oz.
Eggs, whisked, 6 large
Salt and Pepper to taste
1-2 shakes of nutmeg
Tips
If you are not a vegetarian, you may add cubed ham, or chicken to this mixture if you wish. You may also reserve a little of the cheese before stirring it all into the mixture to sprinkle on the top of the dish before baking for a crispier crust.
Directions
In a large skillet, pan fry onions and garlic in a tsp of coconut oil until soft. Add mushrooms and continue cooking until they are lightly browned and soft too. Add chopped spinach stirring until wilted. Turn the heat off under this pan and let cool. Spray the inside of a rectangular baking dish and turn on your oven or toaster oven to preheat to 350 degrees F. Add cheese to the vegetable mixture and stir in. Season mixture to taste. Whisk the eggs and add to the vegetable mixture, pour into your prepared baking disk, and bake for 30-35 minutes until set. Once cooled, slice into 6 servings.
