Ingredients

    1 lb. fresh asparagus, cut in half or thirds
    4 baby zucchini, rounds or sticks
    1 package (pint) brussels sprouts, quartered
    2 Tbsp olive oil
    1 Tbsp balsamic vinegar
    4 cloves garlic, grated
    1/2 tsp salt
    1/2 tsp pepper
    1 Tbsp italian seasoning

Tips

Switch up the veggies and seasoning to suit your tastes.


Directions

Pre-heat oven to 400F.

1. Prepare all veggies.
2. Whisk together olive oil, vinegar, garlic, italian seasoning, salt, and pepper.
3. Pour over veggies, and toss to coat evenly.
4. Place on a cookie sheet, or 13x9 dish, and roast 30-40 minutes, or until done to your taste.
