Introduction
My dad used to make these cookies for my birthday or at Christmas. I've made them several times, with several different variations and they are always a hit. Ingredients
-
1c sugar
4 sticks of unsalted butter
4 eggs
1c frozen cherries
1c frozen blueberries
1c apple juice
1tsp vanilla
3c flour
3c whole wheat flour
1tsp baking powder
1/4tsp salt
1/4c chopped pecans
Tips
If the mixture is too wet, lower the amount of eggs. The original recipe called for 3 but since I live in a desert, it's too dry here for 3 and so I've added one more.
Keep an eye on the baking time. My oven cooks hotter than most so you may have to adjust according to your oven temp. The cookies are relatively hard to burn but it is possible, so be warned.
You can change the flavoring and take out the berries if you wish to create your own flavor. I've done these with banana flavoring and lemon flavoring as well as vanilla and they are always delicious.
Directions
1) In a large bowl cream butter and sugar together until smooth. Add eggs one at a time, beating well in between each. Add vanilla; set aside
2) Blend frozen cherries and blueberries with apple juice in a blender until smooth. Add to Butter and sugar mixture. Set aside.
3) In a large bowl, combine all dry ingredients and slowly add to butter and berry mixture.
4) Cover and place in refrigerator for 1hr (longer if you don't have the time in an hour)
5) Pull out of fridge. Grab a handful of dough and place on a lightly floured surface. Roll out to at least a 1-in thickness. Used cookie cutters of choice, cut out and place them on a lightly greased cookie sheet.
6) Bake at 350 degrees for 8-9min. Cool.
