Number of Servings: 8

Ingredients

    8 cups skim milk
    2 and 2/3 cups water
    2/3 cup sugar
    1 cup (dry) Arborio rice
    3 tablespoons butter
    1 tablespoon vanilla extract
    cinnamon as desired

Tips

You could also add dried fruit or nuts, but it will add to your nutritional information...I prefer the creaminess of the plain pudding.


Directions

Bring milk, water and sugar to a boil. Add rice and bring back to boil. Reduce heat to a simmer. Stir every 10 minutes to prevent scorching. It will be done when the liquid is becoming thick (and be careful because right around then, the rice will begin to stick to the bottom of the pan). Turn the heat off, and add butter and vanilla. Ladle pudding into containers with lids. Sprinkle with cinnamon. Cool before placing lids on and refrigerate. Good warm or cold. Will keep in refrigerator for several days if it lasts that long in your home! Enjoy!
