Ingredients

    Ground lean turkey -20 oz
    Onion -2 cups chopped
    Garlic -3 cloves chopped
    Celery -1 cup chopped
    Diced chiles -2 4oz cans
    Cannellini beans - 2 15 oz cans,drained and rinsed
    Low sodium chicken broth - 2 quarts
    Cilantro - 1 bunch chopped
    Spinach - 4 cups chopped
    Lime -zest and juice of 1 lime
    Salt- 1 tsp or to taste
    Black pepper -1/2 tsp or to taste

Tips

For a creamier texture, mash 1/2 can of the beans before adding to the chili.


Directions

In a soup pot, cook turkey, onion, celery and garlic over medium high heat until turkey is no longer pink. Add chilies, beans and broth. Bring up to a simmer. Add cilantro, spinach and lime juice. Simmer for 10minutes. Seanson to taste.
