Ingredients

2 tbsp Extra Virgin Olive Oil
1/4 cup Green Onion, Chopped
1/4 cupBell Pepper, Red chopped
3 Eggs, Beaten
1 cup (two cans) Canned Crabmeat
1 cup Evaporated nonfat milk (not diluted)
1 Pie Shell
1/2 Cup Swiss Cheese Shredded
Directions
Saute onion and red pepper until soft. Stir in crabmeat and season with salt and pepper. Cook one minute and remove from heat and allow to cool.
In a large bowl beat eggs until light. Whisk in Evaporated milk and then add the crab mixture. Pour into Pie crust and sprinkle with Swiss Cheese.
Bake in preheated oven 375 degrees for 25 to 30 mins. or until puffy and golden brown.
