Introduction

We made this recipe for a school social studies project my son was doing many years ago on Viet Nam. I only recently discovered that what I knew as Vietnamese Beef Soup was actually the Pho which is the main attraction at so many Viet-Thai restaurants around the city these days. Ingredients

    1 Cn beef consomme
    1 cn beef broth
    3 C water
    2 T soy sauce
    2 T ginger root, finely chopped
    1 Cinnamon stick
    4 oz rice vermicelli
    2 carrots, peeled and thinly sliced
    6 oz. sirloin or other beef, thinly sliced
    1/4 red onion, chopped
    Fresh cilantro or parsley, chopped
    Fresh basil, chopped

Directions

Put soups, water, soy sauce, ginger and cinnamon stick in large pot. Bring to boil and simmer 20 minutes.
Meanwhile soak vermicelli in hot water.
Remove cinnamon stick from soup.
Drain vermicelli.
Add carrots and vermicelli to soup pot. Simmer 3 minutes.
Add beef and bean sprouts to pot. Cook 1 to 2 minutes.
Spoon into bowls. Top with onion, basil and cilantro.
Serve piping hot.
