Ingredients

    Dry:
    1/4 cup of coconut flour
    3/4 cup of whole wheat flour
    3/4 cup of oat bran
    1 scoop of vanilla protein powder
    1/4 cup of shredded unsweetened coconut
    1 tsp of baking poweder
    pinch of salt

    Wet:
    1/4 cup of egg whites
    1 egg
    1 tbsp of coconut oil
    1 cup of crushed pineapple
    1/4 cup of Silk unsweetened almond or coconut milk

    Makes 12 muffins

Directions

Bake for 25 minutes at 350F
