Ingredients

    18 Omega 3 Eggs
    1 1/4 C. Heavy whipping cream
    1 C. shredded part skim mozzarella
    1 C. shredded extra sharp cheddar cheese
    2- (3oz.) ham steaks cubed
    1/2 -1 cup finely chopped red bell pepper (depending on personal taste)
    3-4 finely chopped green onions (including white ends)
    Salt, Pepper & seasonings

    3 strips of crisp cooked bacon (if desired)

Tips

I like to make up bunch of these to keep on hand for busy mornings. Just heat in microwave till warmed through. Play around with this recipe! Change up the veggie combination and the cheeses used to find one you love. IE. Chopped and drained frozen Spinach and Swiss and cream cheese with white onion, or mushrooms and yellow onion...Try adding a little salsa to top. Enjoy!


Directions

Pre-heat oven to 350* F.Add eggs, cream, and mozzarella cheese in large mixing bowl. Mix well and add salt, pepper and spices until well combined. In small bowl combine shredded cheddar, ham, green onion, and red pepper. Spray pan with baking spray. Spread ham/veggie mixture evenly in bottom of pan. Pour egg mixture over all. Bake 9x13 pan for 40-50 minutes or until knife comes out clean and edges of quiche are golden brown. Bake muffins at same temp for 25-30 minutes or until knife comes out clean. If using muffin pan be sure to spray pan liberally with baking spray!++Add crumbled bacon to top for last 10 minutes of baking. Let cool in pan 10-15 minutes. Loosen from edges and cut into small squares. Keep covered in fridge for up to 1 week or wrap and freeze for up to 2 months.

Serving Size: Makes 24 mini quiche in muffin tins or large quiche in 9x13.
