Ingredients

    1tbspn oil
    2 tbspns chopped shallot
    10oz or 280g chopped mushrooms
    herbs to taste
    14oz or 400ml chicken stock
    11oz or 300ml water
    1/2 cup cream
    1/2 tbspn lemon juice

Directions

Cook mushrooms and shallots in oil til lightly browned
Add broth, water, reduce heat and simmer 10 mins.
Remove from heat, puree and add cream and lemon juice. Heat again til hot.
