Introduction

A whole healthy food version of a tiramisu. Egg yolks can be removed if you want a lighter version and the cottage cheese can be fat free as well. Refined sugar free as well as gluten free. Ingredients

    Filling 1:
    300 g Cottage Cheese 4%
    170 g Light Quark 0.3%
    3 pastured organic egg yolks
    1 tsp vanilla extract
    6 pitted dates

    Filling 2 (Cookie):
    50 g Shredded Coconut
    50 g Almond Flour
    50 g Hazelnut Flour
    2 tbsp maple syrup
    2 tbsp barley cup or coffee mixed with a bit of hot water

    Topping:
    1 tsp cocoa powder

Tips

Only use pastured organic egg yolks if using egg yolks at all. Will not be overly sweet. You can add more or less maple syrup and dates of course if you want it sweeter. Turkish or greek yogurt could probably replace the quark if you can't find it.


Directions

Mix all ingredients for filling 1 in a blender or food processor. Then mix all ingredients for filling 2 together, either with a food processor or just mix with a spoon. Then layer some of filling 2 and layer 1 in glass dessert cups ending with layer 1. Sprinkle a little bit of cocoa powder on top.
