Introduction
These lentils remind me of a sunset with the deep red sauce, lighter orange lentils, and yellowish onions. They are easy, mush faster than other types or lentils or beans, and super filling for a large serving! Ingredients

2 onions, diced
2 cloves garlic, minced
2" section of fresh ginger, peeled and minced/grated
1C dry red lentils
1T curry powder
1T cumin powder
1t dry cilantro flakes (or 1T fresh, chopped)
1/4t black pepper
1 can diced tomatoes (or 2 large fresh tomatoes, diced)
1 can tomato paste
3 "cans" water (about 5-6 cups)
3/4-1 t. salt (add when lentils are fully cooked)
Directions
Spray a large sauce pan with oil and begin to sautee the onions. When they have softened, add garlic and ginger and sautee another 2 minutes.
Stir in lentils and all spices (except salt), then add tomatoes and tomato paste. Stir thoroughly to dissolve the paste. Add the water, bring to a boil, reduce to low and simmer, about 45 minutes, or until lentils are quite soft and broken down - stirring occasionally. Use your smallest burner on low to simmer, the lentils get thick quickly and are likely to burn.
Stir in salt to taste before serving. Serve over rice with a green vegetable or salad.
