Ingredients

    Kale, 1.5 cup raw
    Jennie-O Uncured Turkey Bacon, 3 oz
    Frozen Sweet Potato Fries, 3 oz
    Jarlsberg Lite Swiss Cheese, 1 oz
    Goat Cheddar, 2 oz
    Eggs, 6 large

Tips

Use an oven-safe skillet.


Directions

Cook the sweet potato fries in oven at temp on bag. After they are cooked, set oven to 400 degrees. Cook the turkey bacon in a skillet. Set the turkey bacon aside. Cook the kale in the skillet. When the kale is cooked, add back turkey bacon and sweet potato fries to warm them. Add any desired spices and mix in skillet. Place cheese on top of veggies/meat. Beat eggs together and add them to skillet, covering the other ingredients. Cook on stove until eggs begin to set, 1 to 2 minutes. Place skillet in 400 degree oven for 8 to 10 minutes, until eggs are not runny in middle when cut with a knife. Broil for a couple minutes to crisp top, if desired.
