Ingredients

Crust:
1 1/2 cups Carbquick
1/4 cup heavy whipping cream
1/3-1/2 cups water
2 TBSP melted butter
2 tsp cumin powder
1 tsp garlic powder
Toppings:
1 lb lean ground beef
1 package of your favorite taco seasoning
1 small can tomato sauce
1 small chopped onion
1 cup-1 1/2 cups sour cream
8-12 oz shredded sharp cheddar cheese
7 crushed flaxseed or other tortilla chip
Tips
Add lettuce, tomatoes, olives, or other favorite taco toppings at the end of baking to individual slices. My kids love it just plain with no additional toppings, they are not necessary as this is quite flavorful on its own! I usually serve additional flaxseed tortilla chips, salsa and guacamole as a side. Don't forget Baja Bob's Sugar Free Margaritas to complete this delicious low carb Mexican meal!
Directions
Preheat oven to 375 degrees. Spray 9x13 baking pan with cooking spray. Mix all crust ingredients in small mixing bowl and press into bottom and up edges of baking pan. Bake for 10 minutes. Do not over-bake crust, it should not yet be golden brown, but requires a little more cooking time than the full dish.
While crust is baking, brown the ground beef and chopped onions, drain when browned. Add small can of tomato sauce and one package of your favorite taco seasoning to ground beef mixture. Spread beef mixture over the crust evenly.
Spread layer of sour cream over surface of ground beef mixture, it's OK if it blends with the ground beef a bit add a thicker or thinner layer depending on your preference. We usually use almost a full larger container or 1 and 1/2 smaller containers to give it a nice creamy texture in the middle Cover sour cream with cheese, add more or less cheese to your liking. Evenly distribute crushed flaxseed or other tortilla chips (about 7 chips) over the cheese (this adds a nice crunch and should not be omitted.
Bake at 375 for approximately 25-30 minutes until cheese is bubbly and crust is golden brown. Cut into 9-12 pieces.
