Introduction

Ingredients

    32 oz. Vegetable Broth, Organic, Trader Joe's
    35 oz. Dark Turkey pieces, bone in
    1 Tbs. Olive Oil
    16 oz. Onions, chopped
    15 oz. Carrots, chopped
    21 oz. Sweet Potato, cubed
    1 tsp. Salt

Directions

In a large saucepan, brown the turkey pieces, then the vegetables, in olive oil. Add a little water to the pan if the any of the ingredients start to burn and stick to the pan. Add turkey, vegetables, and salt to the vegetable broth in a crock pot.


Cook on low for 8 hours, or for 4 hours on high.


At the end of the cooking time, remove the turkey pieces to a chopping board, remove the meat from the bones, chop the meat, and add back to the soup.


A serving of 1 cup is satisfying and filling.
