Ingredients

    1 1/4 c. Unbleached, unenriched bread flour (can sub. all-purpose flour)
    1 c. quick-cooking oats
    3/4 c. wheat bran
    2 tbsp. flaxseed, ground
    1/2 c. Splenda brown sugar blend
    1 tsp. ground cinnamon
    1 tsp. baking powder
    3/4 tsp. baking soda
    1/4 tsp. salt
    1/2 c. raisins
    1 1/3 c. applesauce, unsweetened
    1/2 c. skim milk
    2 egg whites
    Cooking Spray



Directions

Preheat oven to 375°.
Combine flour and the next 8 ingredients (flour through salt) in a medium bowl. Stir in raisins; make a well in center of mixture. Combine applesauce and next 2 ingredients (applesauce through egg); stir well with a whisk. Add to flour mixture, stirring just until moist. Spoon the batter into 12 muffin cups coated with cooking spray.
Bake at 375° for 18 minutes or until the muffins spring back when touched lightly in center. Let cool 1-3 mins,; remove from pans; cool on a wire rack.

Note: Muffins can be frozen in ziploc freezer bag for up to 1 month.

Yield: 1 dozen (serving size: 1 muffin)

    Incredible!
    Very moist, yummy muffins. I had to tweak the recipe since I didn't have the exact ingredients, but it still turned out great. I used granulated sugar instead of Splenda and I only had 1 c applesauce so I added a little vegetable oil. - 4/18/14
