Ingredients

    2 Cans Hunts Diced Tomatoes - Plain or Flavored
    4 Cans Bush's Black Beans - Drained But Not Rinsed
    1 Cup Baby Carrots - Sliced
    8 Ounces Baby Bella Mushrooms - Diced
    2 Medium Sweet Onions - Diced
    2 Medium Bell Peppers (Red or Yellow) - Diced
    24 Ounces Beef Broth
    10 Slices Hardwood Smoked Bacon - Diced

Tips

Salt and Pepper to taste.


Directions

Cook diced bacon over medium heat until it starts to brown.

Add diced onions and saute until they become translucent.

Add carrots, mushrooms, and peppers stir well and let cook for 5 minutes stirring occasionally.

Add drained black beans and tomatoes and stir well to mix. Cook for 5 minutes stirring occasionally.

Pour in beef broth and bring to a boil.

Cover and lower heat to simmer for one hour to ninety minutes.
