Introduction

Ingredients

    3 cups Flour
    2 tablespoons of pumpkin pie spice
    2 tsp Baking Soda
    1.5 tsp Salt
    3 cups Sugar
    1 15 oz can pumpkin
    4 large eggs
    1/2 cup vegetable oil
    1/2 cup Orange Juice

Tips

I fib and tell my son these are "gingerbread muffins" as they do remind him of those because the spices are the same. I'm sure he'd never guess they're full of good-for-you pumpkin.


Directions

Oven to 350.

In a large bowl, combine wet ingredients well. Add dry ingredients and mix just until blended - do not over mix.

Bake in standard size muffin tins with paper liners for 25 minutes.

Makes 30 standard size muffins when filled 3/4 full. Toothpick will come out clean when done.
