I'm always looking for healthy snacks to send to school and with peanuts out of the questions, I am getting creative. I also have Celiac so baking gets challenging. Ingredients

INGREDIENTS:
1/2 cup honey
3/4 cup sunflower butter
1/2 tsp vanilla extract
1 1/4 cup traditional rolled oats
2 tbsp ground flax seed
2 scoops protein powder
1/3 cup unsweetened/shredded coconut
1/3 cup raw sunflower seeds
1/3 Chocolate Chips
Directions
Preheat oven to 350*F.
Mix sunflower butter, honey and vanilla in a microwave-safe bowl or measuring glass and microwave on high for 45 seconds until mixture is melted.
In a separate bowl, mix rolled oats, ground flax seed, protein powder, coconut, sunflower seeds and sesame seeds, and chocolate chips. Combine butter mixture to dry mixture and mix well.
Pat mixture down in an 8-inch brownie pan (it will be sticky) and bake for 10-12 minutes until edges are golden.
Let it cool for 15 minutes in the pan before transferring to a wire rack to cool completely. Cut into desired bar sizes.
To store, wrap individually in plastic wrap or place in plastic storage container between pieces of parchment paper (to avoid bars from sticking together).
