Ingredients

1 tablespoons Olive Oil
1 medium onion finely chopped
2 medium celery stalks finely chopped
3 medium garlic cloves finely chopped
1 teaspoons ground chile powder
1teaspoons ground cumin
1 teaspoon dried chipotle chile powder
16 oz can diced or crushed tomatoes
1 1/2 cups water or low-sodium chicken or vegetable broth
1 pounds sweet potatoes medium dice (about 2 cups)
2 (15) ounce cans black beans, rinsed
2 Tablespoons flax seed is optional.. I just add it to everything.
Green onions chopped (optional) for garnish
Tips
We really like to use this dried chipotle chili grinder. Adds great smokey depth of flavor.
Directions
finely dice the celery and onion.. saute in the olive oil until softened.
Add in the Garlic, chili powder and cumin. Saute another minute until fragrant.
Stir in the stock, tomaotes and potatoes. Simmer on low for 30-35 minutes. Add the beans. Serve with the green onions on top.
Serving Size: Makes about 8 one cup servings.
