Introduction

Ingredients

    2 red bell peppers, cut in half long ways
    5 eggs, beaten
    2 ounces canned, sliced mushrooms, drained
    1 green onion, diced
    1.5 tsp crushed red pepper flakes
    4 tablespoons grated Parmesan cheese
    1 tomato, diced

Tips

This is basic. Feel free to add torn spinach leaves, feta, diced asparagus, just whatever sounds good to you.


Directions

Cut bell peppers in half, longways, and clean them out. It's fine to leave the stems on. It gives you something to help handle them with. Put pepper halves face down on a foil lined cookie sheet. Bake in 375 degree oven for about 15 minutes. Remove from oven and put peppers face up in a foil lined 8x8 square pan. You want them to be touching so they don't tip over & spill the eggs. Beat the eggs in a bowl. Ladle equal amounts of egg into the peppers. Sprinkle the mushrooms, green onion, and crushed red pepper flakes equally into each pepper cup. Cover with foil & bake 30 minutes at 375 degrees until egg is firm. Uncover and cook a few more minutes to brown a little. Remove from oven and sprinkle 1 tablespoon of Parmesan onto each pepper cup, then sprinkle the diced tomato on when you serve it. Add salt to taste.
