Ingredients

    Cottage Cheese, 1% Milkfat, 2 cup (not packed)
    Cream Cheese, 8 oz
    Orange zest, 0.5 tsp
    Almond extract, 0.5 tsp
    Egg, fresh, 2 large
    Egg white, fresh, 2 large
    *Splenda 2/3 cup

Directions

Soften 8 oz. Cream Cheese in a bowl in microwave for 20 seconds.

Puree 2 cups cottage cheese in a food processor until the consistency of sour cream (no lumps)

Add two mixtures together
Add 1/2 tsp. Orange Zest
Add 1/2 tsp. Almond Extract
Add 2 large whole eggs, 1 at a time
Add 2 large egg whites, 1 at a time
Add 2/3 cup Splenda

mix all ingredients well

fill lined cupcake/muffin tin, each 2/3 full with mixture

bake for 25-30 minutes until firm

cool for at least 4 hours or overnight

Enjoy for breakfast!
