Ingredients

    Romaine Lettuce 2 medium heads (inner spears)
    Chopped Parsley, 2 cup
    Quinoa, 1 cup Dried, then cooked and cooled
    Cherry Tomatoes quartered, Fresh (1.5-2 cups)
    Fresh Chives or Scallions, 4 tbsp chopped
    Cucumber (peeled), 1 medium chopped
    Extra Virgin Olive Oil, 1/4 cup
    Sea Salt, 1 tsp
    Pepper, black, to taste
    Hummus, 1/2 cup

Tips

All organic is best!


Directions

Soak 1 cup quinoa in 1.25 cups water overnight in pot
Heat on high, once boiling turn to low, cover and simmer for 10 minutes
Fluff, Chill

Mix all ingredients, besides the lettuce spears
Place in Bowl to serve along plain lettuce spears
Add about 2 Tbsp of Tabouleh mixture to lettuce spear, enjoy


Serving Size: Makes 20-25 (serving size is about 3 spears)
