Ingredients

    1lg head cauliflower
    1 C onion diced
    1 C celery diced
    1 C nonfat greek yogurt
    1/2C miracle whip light
    6 lg hard boiled eggs diced (only use 3 yolks)
    1 sm red pepper (optional) not included in nutritional profile

Tips

I love potato salad, but being diabetic it doesn't love me. I tried this because we all like cauliflower"mashed potatos".


Directions

Cook cauliflower until tender but not mushy. Cool and cut into bite size pieces. Mix with remaining ingredients add salt and pepper to taste, refrigerate.
