Introduction
Heat oven to 325FHeat the half and half in a pan for 5 min or until it begins to boil. Add vanilla extract after taken off heat.
Mix the egg yolks and the sugar in a bowl
Very slowly, pour the hot half/half into the egg mixture whisking constantly. Whisk in the heavy cream over.
Put custard in 6 ramekins and place dishes in baking pan.. Place pan in the oven and add enough hot water to the pan to come halfway up the dishes. Bake custard for 35 min or until their edges are set and their middles are slightly jiggly.
Cool slightly and refrigerate until ready to serve.
Evenly coat the top with a thin layer of brown sugar and under a gas broiler melt the sugar until golden brown caramelized crust forms
