Preheat oven to 450 degrees
Ingredients:
4 - 5oz. Halibut steaks
8 - Roma tomatoes
6 - large garlic cloves - unpeeled
2 - tbsp Parmesan cheese
2 - tbsp extra virgin olive oil
1 -tbsp red wine vinegar
1 - tbsp freshly squeezed lemon juice
1 - tsp dry rosemary
1 - tsp dry tarragon
1 - tsp sea salt
1/2 - tsp ground black pepper
Directions
Tomato Coulis
Slice tomatoes into 1/4 inch slices. Wrap unpeeled garlic in foil. Lightly grease baking sheet with olive oil. Place tomatoes and garlic on baking sheet. Brush tomatoes with remaining oilive oil. Bake at 450 degrees for approx. 20 minutes or until tomatoes are lightly browned. Peel garlic and place in blender with tomatoes, lemon juice, red wine vinegar, parmesan cheese, salt and pepper. Puree until smooth.
Reduce oven to 350 degrees
Wash and dry fish, brush lightly with 1 tsp of olive oil. Place in baking pan. Bake fish in 350 degree oven for 5 minutes (depending on size and thickness of fish). After 5 minutes, top each fillet with 1/4 of tomato coulis and return to oven and broil for 5 minutes. Serve with brown rice and steamed asparagus.
