IntroductionI was playing around with different gluten free - low cal snack options and really liked this one. I was playing around with different gluten free - low cal snack options and really liked this one.
2 (6") corn tortillas
2-4 Tbsp. reduced fat whipped cream cheese
1 medium tomato sliced
1 tsp garlic powder (to taste)
Also great with a little bit of fresh basil added.
**If you want the tortillas to stay soft, you can assemble them and then quick broil them for 1-2 minutes just to warm them up it you want. I like them a little crisper which is why I toast them a bit first.
Spread cream cheese evenly over tortillas and then top with tomato. Sprinkle with garlic powder.
You can either enjoy them as is or quick broil them for 1-2 minutes to warm them and lightly roast the tomatoes.
Note calorie count is for 4T cream cheese. I have used less but then it doesn't cover the tortilla.
