Ingredients

    Banana, fresh, 1 medium (7" to 7-7/8" long)
    Spelt Flour, organic, 0.25 cup
    Cinnamon, ground, 0.5 tsp
    Egg whites, 1/4 cup (2 egg whites)

Tips

The texture and flavour are somewhat similar to a moist banana bread. Enjoy this on its own or topped with your favourite nut butter (ie - peanut or almond butter). Top while the pancake is still warm so that it melts and spreads easily. Also try adding raisins or other dried fruit.


Directions

Mash peeled banana until combined. Add dry ingredients and mix well. Beat or whisk egg whites until frothy. Combine banana mixture with egg whites. Heat a small non-stick frying pan (or lightly spray with oil) on medium heat. Add full mixture and spread evenly. Heat for a few minutes on each side.

Serving Size: Makes 1 serving.
