Ingredients

1 cup Whole Wheat Flour
1 cup Flour, All-Purpose
1 cup TVP
3/4 tsp Baking Soda
1/2 tsp Salt
1/4 tsp Nutmeg
1/4 tsp Cinnamon
3/4 cup Sugar
4 tbsp Butter, without salt
2 large Egg
1 tsp Vanilla extract
1/8 cup Apple Juice
1/4 cup Applesauce, unsweetened
1 medium Carrots, raw
1/4 cup Yogurt, Plain
2 1/2 cup Fruit and Veggie Puree
Tips
Add extra sugar if you like a sweeter muffin. I suggest using parchment baking cups to avoid the paper sticking to the muffin.
Directions
Pre heat the oven at 375.
Puree enough fruits and veggies to make 2 1/2 cups. Use the apple juice to help puree.
Use your food possessor to turn textured vegetable protein into a powder.
Mix the first 7 ingredients and set aside.
Melt the butter then mix remaining wet ingredients.
Mix the wet and dry ingredients to make muffin batter.
Line a muffin tin with parchment baking cups and bake for 20-25 minutes.
Serving Size: 22-24 muffins
