Ingredients

12 oz Fettuccine
1 cup Red Onion, Chopped
1.5 cup white beans, rinsed and drained (15 oz can)
1.5 cup garbanzo beans, rinsed and drained (15 oz can)
3 cup Peas
1 tsp Pepper, black
2 tsp Garlic powder
4 Tbs Light Butter
3 oz parmesan cheese
Directions
- Cook fettuccini according to package directions. While pasta is cooking,
- drain and rinse canned beans
- rinse frozen peas and break apart any clumps.
- Combine beans, peas and red onion in microwavable bowl.
- Microwave on high for three minutes.
- Drain cooked pasta.
- Add bean mixture and dot with butter patties;
- season with garlic and black pepper;
- mix well over low heat.
Serve immediately. Sprinkle freshly grated parmesan cheese over each serving.
Serving Size: makes nine 2 cup servings
