Ingredients

1 lb Lean Ground Beef (93% - 96%)
1 15 oz can Black Beans (or cook your own)
1 15 oz can Whole Kernel Corn (drained)
1 15 oz can Tomato Sauce (plain)
2 10 oz cans Ro-Tel Tomatoes & Chilies (any heat)
1 package McCormick Taco Seasoning Mix (Red. Sodium)
2 cups Chicken Stock (box or homemade)
1 cup Parboiled (Converted) Long Grain Rice
Tips
Crumble the raw ground beef into the bottom of the crock pot, season with taco mix, then add all other ingredients on top. If you're able, go back every few hours and give a good stir and make sure the ground beef is breaking up into smaller bite sized pieces - helps to make sure even cooking and seasoning too.
Directions
This is my take on a recipe that came from another website. I prefer to use 93 to 96% lean ground beef. You can also use a pound of chicken breast, cut into bite sized pieces. I prepare this in a standard Crock Pot. You simply deposit all ingredients EXCEPT THE RICE into the pot, set on Low, and leave for 6-7 hours. When it is ready, add 1 cup of converted (parboiled) rice, stir, cover, and let cook an additional 30 minutes. Turn off crock pot, stir again, let sit for a few minutes and rice will absorb excess liquid. Makes 6 GENEROUS portions, or more, smaller portions.
