This pasta-less dish is a great low-carb alternative! This pasta-less dish is a great low-carb alternative!
Number of Servings: 2

Ingredients

    1 tablespoon olive oil
    1 medium yellow onion, diced
    1 can diced tomatoes with green chiles
    1 medium yellow squash
    1 large zucchini (about 1 pound)
    2 tablespoons grated Parmesan cheese

Directions

Saute onions in olive oil until translucent. Add tomatoes (including juice), cover and cook on medium low for 10 minutes.

While tomatoes are cooking, use a spiralizing tool to cut zucchini and squash into "pasta". (If you don't have a spiralizer, simply cut vegetables into extremely thin strips.)

Add vegetable "pasta" to cooked tomatoes (most of the liquid will have evaporated). Cook for 1-2 minutes, just enough to heat vegetables. Top with Parmesan cheese, enjoy!

Serving Size: Serves 2 as a main dish, or 4 as a side dish
