Ingredients

1/2 tablespoon of olive oil
2 cloves of fresh garlic, finely chopped or minced
1/2 cup chopped onion
2 small potatoes, scrubbed, unpeeled and diced
1/2 teaspoon of ground cumin
2 cups of sliced fresh mushrooms
5 cups (about 5 ounces) of fresh spinach leaves
1/4 teaspoon salt
1/8 teaspoon black pepper
Directions
Place the olive oil in a large skillet and heat
Add garlic, onion, potatoes, and cumin and stir fry for 2 - 3 minutes.
Add the sliced mushrooms and continue to cook at medium temperature until mushrooms begin to release their juices.
Add the spinach and stir fry until spinach is just wilted.
If skillet becomes dry, add a small amount of water to keep things from sticking.
Serve hot.
Serving Size: Makes 4 1-cup servings.
