Introduction

Ingredients

    3 Lemons (skin grated and juiced)
    20 g Plain gelatin
    1000 ml Plain low-fat yogurt
    250 ml Creamed cottage cheese
    100 ml cream
    8 tsp Xylitol

Tips

Pudding sets to a soft set, not solid like a jelly.


Directions

Add lemon juice, lemon rind and xylitol to saucepan and heat on gentle heat, to slightly hot, not boiling.
Whisk till xylitol is dissolved.
Add gelatin and set aside.
In another bowl, add yogurt, cottage cheese and cream.
Whisk till all is combined and smooth.
Add cooled gelatin mix and whisk till combined.
Pour into glass container, cover with cling wrap and put into fridge.
Let it refrigerate up to four hours or until set.
