Ingredients

1-3/4 cups flour
1/4 tsp baking soda
2 tsp baking powder
1/2 tsp salt
1/3 cup light butter substitute, softened
4 egg whites
1/3 cup sugar
1/2 cup Splenda
4 overripe bananas, mashed
2 Tbsp bourbon
1/2 tsp lemon juice
1/2 cup semi-sweet chocolate chips
1/2 cup pecans, chopped
Tips
Best when allowed to sit for 24 hours before serving
Directions
1. Preheat oven to 350 degrees F. Coat a loaf pan with cooking spray and set aside.
2. In a medium sized bowl, combine flour, baking soda, baking powder and salt.
3. In a large bowl of a stand mixer, cream butter. Add egg whites, sugar, Splenda and mashed bananas. Beat on medium speed for 3 minutes. Add lemon juice and bourbon, beat additional 30 seconds.
4. Slowly add flour mixture and beat just until combined. Fold in chocolate chips and chopped pecans.
5. Pour into pan and bake 50 - 60 min or until a toothpick inserted in top center comes out clean. Loaf should spring back slightly to the touch.
6. Cool completely on wire rack, wrap in foil.
