Ingredients

    1 large Tomato, halved with seeds removed
    1 ear of corn, cleaned
    1 half red bell pepper
    1 half sweet onion, wedged in quarters
    1 clove garlic minced
    1 tbsp fresh cilantro
    1/2 fresh lime zested
    1 tbsp good quality olive oil

Directions

Grill your tomato, bell pepper, corn and onion till they have good grill marks and are warm yet still firm. Remove from heat and dice. (Or shave corn from cob.) Mix together with remaining ingrediants and let sit for 5 minutes. I use this with black beans and diced chicken on baked torilla chips when my daughter wants nachos. It also works nicely with eggs.
