Ingredients

    2 stalks lemon grass, smashed and chopped fine
    4 cloves garlic
    6 Tbsp. light soy sauce
    6. Tbsp. peaunt oil
    1 bunch cilantro chopped
    2 Tbsp. honey
    1 cup peeled chopped ginger
    4 boneless skinless chicken thighs

Tips

If chicken is done before the hour is up, take it out of the sauce and reserve. Keep cooking the sauce down unitl it is glossy and thck. You can chop up the chicken or leave it whole. Serve over brown rice or rice noodles.


Directions

Set the oven to 350.
Trim outside stalks off the lemongrass. Cut off the top inch of the stalk. Smash the stalk with a meat tenderizer, then chop fine.
In a food processor, combine all ingredients but the chicken. Process until fine but not perfectly smooth.
Put the chicken in a caserole dish and cover with the lemongrass mixture. Bake for one hour.

Serving Size: Makes 4 servings. Serve with Brown rice
