Ingredients

    1 tablespoon olive oil
    2 cloves garlic, minced
    1 (14.5-oz) can fire-roasted diced tomatoes
    1/4 cup chopped fresh parsley
    1/2 teaspoon dried oregano
    1 cup Great Northern beans, drained and rinsed
    1/4 cup sliced black olives
    6 oz uncooked whole-wheat penne pasta
    1/4 cup crumbled feta cheese

Tips

Serve with Almond Green Beans


Directions

Heat oil in a skillet over medium heat; add
garlic, and sauté 1 minute. Add tomatoes,
parsley and oregano. Bring to boil; reduce heat,
and simmer 15 minutes. Add beans and olives;
cook 1 minute or until heated. Meanwhile, cook
pasta according to package directions. Serve
tomato sauce over pasta; top with feta cheese.
