Ingredients

    1 lb beef chuck, cubed
    1 tbsp olive oil
    cooking spray
    1 medium onion, diced
    1 poblano pepper, diced
    3 cloves garlic, diced
    2 tbsp chili powder (I use Penzey's Chili 3000)
    1 15.5 oz can tomato sauce
    1 15.5 oz can fire roasted diced tomatoes
    2 cans red, black, or chili beans
    2 cups beef broth

Directions

Brown chuck in oil in a large heavy bottomed pan. Wipe pan out and add onion, poblano, and garlic with a spritz of cooking spray. Cook until soft. Add chili powder, stir and cook 1 minute. Add beef back into pan along with remaining ingredients. Bring to a boil then reduce heat. Either cook on medium-low on the stovetop or in the oven at 275 for about two and a half hours or until the beef is tender. Serve with light sour cream and crushed tortilla chips.

Serving Size: Should make about 8 one-cup servings once cooked down
